Biagan Choka/Roasted Eggplant

    So delicoius and healthy, this dish is traditionally eaten with some type of flatbread... whether fried, roasted or baked. Baigan Choka is a very popular breakfast item in Trinidad. It is made from fire-roasted eggplant, garlic, tomatoes and onions. 

Apart form the prep-work, it's a fairly easy dish. 

I absoloutely love Baigan (eggplant) and my family loves it too. Not too long ago, my husband hated it... he'd never had it my way; until I made it for him... now he's a full-blown believer in the choka........... Ok I got a little carried-away there, he absoloutely loves it now.  Oh boy is it good!!!

Ingredients

  • 2 large Eggplants

  • 1 large Onion

  • 5 cloves Garlic

  • 4 large Tomatoes

  • 1 Pimento

  • 1 medium Red Sweet Pepper

  • 2 Tbsp Olive Oil

  • 2 Tps All Purpose Seasoning  

  • Salt to taste

Directions

On the stove, roast Eggplant, Onion, Garlic, Tomatoes, Pimento and Red Pepper. (if you prefer oven roasting, thats fine. I love that slightly smoky and charred taste from fire-roasting)  

After veggies are roasted, peel and dice. 

Be sure to get as much of the charred skins off as possible.

Chop the eggplant.

In a large pot or skillet, pour Olive Oil and saute Onoin, Pimento, Garlic and Sweet Red Pepper for about 4-5 minutes.

Add Eggplant,tomatoes, All Purpose Seasoning and salt to taste and saute for an dditional 5 minutes.

Delicious with Fried Bake or Sada Bake.
