Shrimp Scampi

   Im a busy woman, with a husband and two kids who all demand some form of attention. On those really killer days, I feel comforted to know that there are meals that can be whipped up in under 30 minutes. I love shrimp... we all do; everyone wins.

 This recipe is so quick, so easy and so gosh-darn good, if this is what busy days look like, you'll wish you'd have more!

Ingredients

  • 4 oz Bucatini Pasta (or spaghetti if you prefer)

  • 6 Cloves Garlic (chopped)

  • 3 sprigs Flat-leaf Parsley (leaves roughly chopped)

  • 2 Tbsp Olive Oil

  • 2 Tbsp Butter

  • 8 Large shrimp (more if you'd like)

  • Pinch Red Pepper Flakes (optional) 

Directions

Cook pasta until firm but not hard.

While pasta is cooking, over LOW heat, add Olive Oil, Butter, garlic and Pepper Flakes and cook until garlic is soft and caramelized. If the pan is too hot the garlic will burn and become bitter.. 

 

Just as shrimp is cooked, remove from heat,  add pasta, toss to coat and add parsley.
