Coconut-date Rock Cakes/ Drops
Growing up, Sunday evenings were the best. Just knowing that mummy would be baking Bread, Sweetbread and Rock Cakes or (mostly called) Coconut Drops; had my sisters and I, all excited. The house would be filled with the aroma of delicious coconut... This recipe reminds me of those days when we would eat those Drops straight from the oven with a slice of cheese and it just made everything alright.
This is my version, with sweet Dates and raisins... it's great to have with a nice hot cup of tea or even a milk-shake. Hopefully this would create beautiful memories for my kids... But as for the moment, all they know is that it's delicious and that's all that matters!!!
Ingredients

2 1/2 Cups Flour

1 Tsp Baking powder

1/2 Tsp Baking Soda

3 Tbsp Shortening

1/2 Tsp Salt 2 Tbsp Sugar

1/4 Cup Bran
-
2/3 Cup Sweetened Shreaded Coconut

2/3 Cup Pitted Dates (finely chopped)

1/3 Cup Raisins
-
2 Tsp Vanilla Extract

1 1/2 Cup Milk
Directions
In a mixing bowl, combine Flour and Shortening and rub together between fingers or palm of hands until mixture resembles coarse bread crumbs.
Add Baking Powder, Baking Soda, Salt, Sugar, Bran, Coconut, Raisins and Dates and mix well to combine all ingredients.
In a separate bowl, mix together Milk and Vanilla Extract.
Combine Flour and milk mixture and stir with a wooden spoon until all the milk has been absorbed by the flour.
Drop spoonfulls of dough onto a well greased baking sheet (lined with parchment paper if you prefer) and bake in a pre-heated for 25-30 minutes at 200 C. Or until Drops are firm to the touch and golden brown in color.
Serve with Jam, Jelly, Butter or Peanut butter or even Cheese.
I love making a fresh Berry Sauce to accompany these for breakfast.
