Orange-raisin Soda Bread
On a mission to update classic recipes, I created this any-day any-time recipe. Bursting with citrus flavour... then the pop of sweet raisins and tart Cranberries, this recipe can be eaten for breakfast... hot out of the oven, with a pat of butter or a slice or two of cheese; for a snack with some jam, jelly or cream cheese or for dinner... However you decide to indulge, you'll never be disappointed!!!
Ingredients

2 Cups Flour

2 Tbsp Sugar

1 Tsp Baking powder

1 Tsp Baking soda

1/2 Tsp Salt

3 Tbsp Butter

2 Tbsp Shortening
-
1/2 Cup Raisins
-
1/4 Cup dried Cranberries
-
2 Tbsp Sour Cream
-
1/2 Cup Orange Juice
-
2 tsp Orange zest
-
1/2 Cup Evaporated Milk
Directions
Preheat oven to 375 F (190 C)
In a small container, place Orange zest, Orange juice, Raisins and Cranberries... allow to soak for about 20 minutes.
In a mixing bowl, add Flour, Butter and Shortening... using your hands, crumble butter and shortening into flour until mixture resembles coarse bread crumbs.
Add Sugar, Baking powder, Baking soda and Salt to the flour mixture. Make a well in the center.
Add Orange juice mixture, Sour cream, and Evaporated milk and mix with a wooden spoon or spatula until ingredients are just combined (Over-mixing will create a tough dough)
Turn dough out onto a floured surface and form into a round loaf. (working the dough as little as possible. If it looks a bit shaggy... you're doing it right!!!)
Place on a bking sheet, take a sharp knife and score the dough... Leaving an X (this ensures even cooking)
Brush with Milk or Egg-wash for a beautiful golden color (This step is optional)
Bake For 35-45 minutes... Enjoy hot, room temperature or cold!!!
