Chewy and Crisp; Brown Sugar-Oatmeal Cookies

    With soft chewy centers and crisp edges, these all-brown-sugar Oatmeal cookies are the perfect snack... or breakfast (when i'm feeling naughty)

I love these so very much so whenever I make a batch... or two, I bake just enough to have a few while they are still warm and the centers are still extra chewy; then I freeze the rest. It's so handy to just thaw for a couple minutes, scoop onto a cookie sheet and bake for a coouple minutes. It's great to just sit back after a busy day and have a cold glass of milk with a few of these cookies... I tell you, the feeling is quite sublime!

 

Ingredients

  • 1 Cup Brown Sugar

  • 1/2 Cup Butter

  • 3/4 Cup Flour

  • 1/2 Tsp Salt

  • 1/4 Tsp Baking Soda

  • 1/4 Tsp Grated Nutmeg

  • 1/4 Tsp Ground Cinnamon

  • 2 Tsp Vanilla Extract

  • 1 Large Egg

  • 1 1/2 Cups Oatmeal

Directions

Pre-heat oven to 350 F (177 C)

In the bowl of a mixer, cream butter and sugar until light and fluffy. 

In a separate bowl, sift together flour, salt, baking powder, baking soda, nutmeg and cinnamon; and set aside. 

To the butter and sugar mixture, add vanilla extract and egg and mix until egg is well incorporated.

Add the flour mixture in thirds, ensuring that each adition is fully combined.

Add Oatmeal and mixt just until incorporated.

Scoop or spoon batter onto cookie sheet and bake for 8-10 minutes or until edges are set. As cookies cool, they become more crisp so they might just be perfect if you think your baked dough is a bit soft.

Allow cookies to cool for about 5 minutes before carefully placing on a rack to cool completely.
