Tasty Trini Pepper-sauce

   The Caribbean is known for many things, all including it's flavours. We love spicy food. And our pepper-sauces tell this story... Ranging from mangoes to pumpkin or even both can be added to give distinct flavour. This version contains pumpkin and carrots to give that wonderful colour and to lend its cooling effects... Italians have Olive oil, Trinis have Pepper-sauce. Its just one of those things we simply can't do without.

This recipe isn't super spicy as it is made to enhance food (Super spicy pepper-sauces tend to numb the tastebuds)

hence the name: Tasty Trini Pepper-sauce.... But still... Proceed with caution!

Directions

Ingredients

  • 4 Medium heads of Garlic

  • 1 Medium Onion (Cut into 4)

  • 2 Medium Carrots (Peeled and cut into 4)

  • 1/2 Cup peeled chopped Ginger

  • 4 Cups Shadow Benny (washed and cut in half)

  • 1/2 Cup Parsley (Stems too)

  • 1 Cup Diced Pumpkin

  • 35-40 Hot Peppers/ Habanero

  • 1 Cup White Vinegar

  • 1/2 Cup Yellow Mustard

  • 2 Cups Water

  • 4 Tbsp Salt

  • 3Tbsp Sugar

Before you get started, make sure your working space is well ventilated and children are not nearby. These peppers are hot and when blended they tend to fumigate the area.... They will make you choke!!! 

Wear gloves when handling peppers and pepper-sauce and make sure to clean utensils and blender thoroughly after usage.

 

Now, with that being said... Lets begin...

Blend together Garlic, Onion, Carrots, Ginger, Shadow Benny, Parsley and Pumpkin in 1 cup of water (Blend to your desired consistency) and pour into a large bowl.

Wearing Gloves, carefully place peppers into blender or processer with all other ingredients and pulverize.(Be sure not to touch skin, face or eyes)

Combine both mixtures and mix well.

Store in plastic or glass jars. 

Refrigerate and use in your favourite recipes or as a condiment.
