Cinnamon-bran Rolls

Makes 8 buns

    What a great recipe for those who are very conscious of what they eat... I've adjusted the original, to create something that's healthier, but you definitely won't know it is. It has just enough sweetness, to satisfy your cravings but not enough to make you feel incredibly guilty!

Ingredients

  • 3 Cups All-purpose flour

  • 1/4 Cup Wheat bran

  • 1/2 Tsp salt

  • 1 Tsp cinnamon

  • 1 Tsp nutmeg

  • 1 Cup milk 

  • 2 Tsp Dry active Yeast

  • 1 Egg (beaten)

  • 1/2 Stick butter (4 tbsp), melted 

Cinnamon filling

  • 1/2 Stick butter

  • 1/2 Cup sugar

  • 2 Tsp cinnamon powder

  • 1/2 Tsp nutmeg (grated)

Directions

      In a small sauce-pan, slightly warm milk (do not boil) add sugar and dissolve; sprinkle yeast into milk and allow to rest for about 10 minutes (mixture should become frothy). 

Add egg and melted butter and set aside. 

 In a large bowl, combine Flour, bran, salt, cinnamon and nutmeg. Whisk together, then form a     well in the center. Add milk mixture and stir gently, using a wooden spoon unitl well combined.

     Turn dough out onto a floured surface and knead for about 5 minutes until it forms a smooth    ball. Place dough into a buttered bowl and cover with plastic wrap. Allow to rest for 45 minutes                  to 1 hour.... Dough should be doubled in size. Preheat oven to 375 F or 190 C.

     Again, turn dough out onto a lightly floured surface and roll out to about 1/4 inch thickness.                   (Its okay if the shape of your dough isn't perfect... mine wasn't either) 

     For the filling, mix to combine sugar, cinnamon, nutmeg and butter. Use a glove, spatula or the back of a spoon, and coat the dough with the mixture; leaving about 1 inch off the edges.

Begin rolling the dough slowly towards you, making sure the roll is tight and the edges are       rolled properly... This ensures that the filling doesnt fall out in the process. Pinch the edges of                                                                  the roll together to seal.

                  

 Cut roll into 8 equal pieces, place onto a lightly sprayed or greased baking dish or pan (I used a                                              9x2" cake pan) and slightly press to spread rolls. 

 

      Bake for about 30-40 minutes till golden-brown. I prefer to cut bak on the sweetness so I          enjoy these as is... but if you love living on the edge, here's a quick glaze recipe just for you!!!

  • 1  Tbsp Powdered Sugar

  • 2 Tsp milk

    Whisk together and brush or drizzle over buns and enjoy!!!
