Spiced Apple Rolls

     These rolls are by far my daughter's favourite when it comes to rolls. With a sticky filling that oozes from the nooks... The catch is, its much healthier than the average roll and is a great way to get fruit into a toddler's diet (although there are no problems in that area with her)

These rolls are a favourite amongst the kids, so they would be perfect for parties... and they are simple to make. Last but not least... they are vegan... You heard me (Technically) They are tatally Vegan, I mean, what more could you ask for...

Ingredients

  • 4 Large Apples (peeled, cored and diced)

  • Juice of 1 Lime

  • 1/3 Cup Sugar (I use brown)

  • 3 Cups Flour

  • 1 Tsp Cinnamon (powder)

  • 1 Tsp Nutmeg (grated)

  • 1/4 Tsp Ginger (powder)

  • 1/4 Tsp Allspice

  • 1/2 Tsp Salt

  • 1 Tbsp Coconut Oil (Plus 1 Tbsp for coating dough)

  • 2 Tbsp Sugar

  • 1 Tsp Baking Soda

  • 1 Tsp Yeast

  • 1 Tsp Vanilla Extract

  • 1 Cup Water

  • 1 Tbsp water

  • 4 Tbsp Confectioners Sugar/ Powdered sugar

Directions

For the apple filling; Combine apples, lime juice and sugar in a medium pot and cook covered until the apples have formed a thick sauce. This takes about  30-45 minutes. 

Remove from pot and allw to cool.

In a medium bowl, combine flour, spices, salt, coconut oil, sugar, baking soda and yeast.

Combine water and vanilla extract and gradually add to the flour mixture. 

Knead to form a soft smooth dough. Coat with remainder of oil, cover and let rest for about 45 minutes.

The next few steps are very simple if you have made Cinnamon Rolls before.

Roll dough into a circle about 1/8 of an inch thick.

Separate 1 Tbsp of apple sauce to make the glaze.

Spread onto the dough, a generous layer of apple sauce leaving about 1 inch off the edges. 

 

Beginning away from you, begin rolling the dough toward you, to form a tight log ensuring that the roll is even and pinching the ends to seal.

Turn roll so that the seamed side is facind downwards and slice dough  into desired thickness. I usually go for 8 slices.

Place each roll onto a greased baking sheet or pan and slightly press to spread.

Allow to rest for an additional 20 minutes while you preheat your oven to 375 degrees.

Bake for 20-25 minutes or until golden brown. 

In a small bowl, combine remainder of apple sauce, water and powdered sugar and stir well.

Glaze rolls as they come out of the oven.
