Coconut-herbed Rice

      Calling all coconut-lovers.... Here in Trinidad (and the Caribbean) coconuts are everywhere!!!

It plays a significant role in imparting that unique flavour to sweet or savoury dishes. I love coconuts... and my husband loves them even more. This recipe is his favourite rice dish.... So delicious; and did I mention easy to make???  

Ingredients

  • 1 Tbsp Coconut oil

  • 2 Cloves Garlic (finely chopped)

  • 1 Cup Rice

  • 1 1/2 Tsp Salt

  • 1 Cup Water

  • 1 Cup Coconut milk

  • 1 Tsp Rosmary (finely chopped)

  • 2 Tbsp Parsley (roughly chopped)

  • 1/3 Cup unsweetened shreaded Coconut

Directions

         In a medium pot, toast the rice for about 3 minutes; constantly stirring with a wooden spoon untill rice grains are translucent. Add garlic and toast for an additional minute. Add salt, water and coconut milk, bring to a boil, then reduce to a simmer. Cover pot and allow to                    steam for about 20-25 minutes (Do not open pot while rice is steaming) 

      Turn off heat, add rosmary, parsley and Coconut and cover for an additional 5 minutes.  

                                                                   Serve while hot.
