Sardine Buljol
If you're one that's not fond of sardines, I completely understand... I wasn't a fan... Not until I wrote this recipe. Now, I swear by it. Who knew canned sardines could be so flavourful and delicious???... I didn't. Quick and simple, this recipe takes no more than 15 minutes to prepare. And it can be eaten with any type of bread.
Ingredients

2 Tins Sardines (packed in water)

1/2 medium Onion (finely diced)

1 Clove Garlic (chopped finely)

2 Tbsp Parsley (roughly chopped)

1 Pimento (seeds taken out and diced finely)

1 Large Tomato (finely diced)

Juice of one Lime or 1/2 Lemon

1 Tsp Mustard (yellow)

1 Tsp Salt

1/2 TSP Sugar

1/4 Tsp Black pepper

1/4 Tsp Cayenne pepper
Directions
Clean Sardines, removing bones, fins and stomach (throw away) and place cleaned sardines in a bowl. Add all the other ingredients and seasonings.
Mix gently, with a fork (try not to break up the sardines too much) just until ingredients are well incorporated.
Serve cold or at room temperature with any types of bread or bake.
I usually serve mine for breakfast, with fried or roasted bake. It's one of my Family's favourites!!!
