Sugar Cookies
My baby, being a huge fan of cookies, after watching the Food Network one day, said to me... "Mummy, I want to make cookies.... with sprinkles"
I'd never made sugar cookies before... but this was motivation... It took a few tries before we could get it perfectly but it was worth all the time.... And flour covered.... everything. I use this base for ALMOST all my cookie recipes and just adjust some ingredients to create different flavours.
Ingredients
1/2 Cup Butter (at room temp)
3/4 Cup Granulated Sugar
1 Egg
1 3/4 Cup Flour
1/2 Tsp Vanilla extract
1/2 Tsp Baking Powder
1/4 Tsp Salt
1/4 Tsp Baking Soda
Directions
In a mixing bowl, cream butter and sugar until light and fluffy.
Add egg and vanilla extract and mix till incorporated.
Sift together Flour, baking powder, salt and baking soda and gradually add to butter miwture.
Turn dough out onto a lightly floured surface and work into a ball. Separate into two and form each piece into a disk about 1 1/2 inch thick.
Wrap in plastic and refrigerate for 30 minutes to 1 hour. (Or freeze for up to3 months)
Preheat oven to 200 Degrees C (390 Degrees F)
Roll each disk out to about 1/4 inch thick... cut into desired shape, place on a lined cookie sheet and bake for 15-20 minutes.
As the cookies emerge from the oven they will be soft... give it a few minutes...they harden as they cool.
Add sprinkles to dough and garnish tops. For a fun and festive look!!!
My baby's favorite version..... replace vanilla extract with Strawberry extract and Voila... Strawberry Sugar Cookies!!!
