Fried Bakes
Makes 8 servings
Growing up in Trinidad, making Fried Bakes was and still is tradition. We usualy have them for breakfast or dinner; piping hot, with cheese, butter or just as it emerges out of the oil. These tasty babies can be eaten with almost anything and they are simple to make. My husband and daughter adores these bakes so I make them at least once a week. I did however adjust the amount of oil used and the type of oil... I now use coconut oil and a small frying pan... this way you can control how much oil you use without going crazy!!!
Ingredients

2 Cups Flour

2 Tsp Baking powder

1/2 Tsp Yeast

1 Tbsp Butter
-
1 Tbsp Shortening
-
1 Tsp Salt

1/2 Cup, 2 Tbsp water

1/4 Cup Coconut Oil (For frying)
Directions
In a bowl, combine Flour, baking powder, yeast, butter, shortening, sugar and salt. Rub butter and shortening between fingers until it is fully incorporated into the flour.
Make a well in the center of the flour. Add water and mix together until dough is tacky.
Turn out onto a clean surface and lightly knead until dough forms a soft ball.
Cover with a clean cloth and allow dough to rest for 30-45 minutes.
Cut dough into 8 equal pieces and form each piece into a ball. Cover with a clean cloth for about 10 minutes.
Roll out dough into 4 inch circles and fry in hot oil... Basting the tops with the oil as they fry helps them to become fluffy.
Place fried bakes on a sheet or cooling rack covered with paper towels (this absorbs any extra oil)
