Chocolate-chip Roll-out Cookies
Many who know me, knows that I don't get too crazy for Chocolate. But there are indeed a few recipes that makes me wish I were a choco-fanatic. (if thats even a word) These cookies are definitely one of those "convert me to a chocolate lover" recipes.
These cookies are so delicious, they are not too sweet... but oh boy are they good.
I even use them when I make cookie ice-cream sandwiches because they hold up so well to that soft, creamy ice-cream. They are crisp, but slightly soft and chewy and that's what makes me cray-cray for them!
Ingredients

1/2 Cup Butter (softened)

1/2 Cup Brown Sugar

1 Egg yolk

1 Tsp Vanilla extract

1 1/8 Cup Flour

1/4 Tsp Salt

1/2 Cup Semi-sweet Chocolate-chips
Directions
In a bowl, sift together Flour and salt and set aside.
In a separate mixing bowl, cream together butter and brown sugar until light and fluffy.
Add egg yolk and vanilla extract and mix till combined.
Add flour mixture to butter mixture and incorporate well.
Fold into the dough, the Chocolate-chips.
Form into a ball, then flatten into a disc, wrap in plastic and refrigerate for 30 minutes.
Preheat oven to 350 F or 175 C.
working on a lightly floured surface, roll dough out to 1/2 inch thickness and, using a cookie-cutter, cut into desired shape.
Place cookies on a cookie sheet and bake for about 10-15 minutes or until edges are crisp and slightly brown.
After cookies are finished baking, allow to cool for 10 minutes before placing on a wire/cooling rack to finish cooling.
