Sada Bakes (Flatbread)

     Very popular in Trinidad, Sada Bakes are also called Sada Roti. These soft, fluffy delicious flatbreads are cooked on a device known as a tawah or Platin; this is a type of griddle usually made from iron or steel. If you don't have one, a griddle or even a large frying pan would do the trick. 

Sada Bakes are great because they can be easily accompanied by any filling. They are delicious with anything and easy to make.

Ingredients

  • 2 1/2 Cups Flour

  • 1 1/2 Tsp Baking Powder

  • 1/2 Tsp Salt

  • 1 1/8 Cup Water

  • 2 1/2Tbsp Oil (plus more for cooking)

Directions

In a medium bowl, mix all ingredients (EXCEPT OIL) and knead to form a soft, smooth ball.

Cover, and allow to rest for 45 minutes to 1 hour.

Cut dough into 4 equal pieces.

 

Using fingers, slightly flatten each piece and pour 1 tsp of oil into the middle.

Re-form dough into a ball ensuring the oil is sealed properly inside the dough.

Cover and let rest for 15 minutes.

 

Roll out each dough into 5'' circles and cook over medium/high heat on a oiled Tawah, griddle or frying pan; brushing each side with oil and turning once, when bubbles start to appear. Cook until golden brown and fluffy.

Wrap in a towel until ready to be served.
