Panko-crusted Shrimp
If you are a fan of the crispy, the crunchy and the shrimp... You'll go nuts for these guys!
This, by far is the best fried shrimp recipe EVER!
So tender with that unmistakable crispy, crunchy coating of Panko bread crumbs; the shrimp are butterflied to create much more surface area for those bread crumbs to adhere to, giving an even crunchy layer with every bite. You're going to love this!
Ingredients

8 Large Shrimp (peeled, deveined and butterflied)

1/4 Cup Buttermilk

1/4 Tsp Salt

1/4 Tsp Cayenne

1/4 Tsp Garlic Powder

1/8 Tsp Black Pepper

1/4 Cup Flour

1/2 Cup Plain Panko Breadcrumbs

1 Cup Oil (for frying... I use coconut oil)
Directions
In a small bowl, add buttermilk, shrimp and seasoning. Mix well and set aside for 10 minutes in the refrigerator.
In a separate container, add flour (season if you'd like)
In a third container, add panko breadcrumbs and set aside.
Remove shrimp from buttermilk, roll to completely coat in flour.
Dip floured shrimp back into seasoned buttermilk mixture, then roll in Panko breadcrumbs to coat; ensuring that each shrimp is coated evenly.
Let stand for about 5 minutes so that coating adheres completely.
Fry shrimp in a deep pot until golden brown and crispy. This usually takes about 2-3 minutes. Remember, do not over-croud the pot... if you do, the shrimp will not get crispy!
Drain on paper towels to remove excess oil.
Serve hot!!!
